It is also naturally gluten-free, making it a great choice for those with gluten sensitivities or celiac disease.

Millet grain has a mild, slightly sweet flavour and a soft, fluffy texture that makes it a great choice for adding to soups, stews, and pilafs. It can also be used as a substitute for rice or other grains in a variety of dishes.

In addition to its nutritional benefits, millet grain is also very easy to cook with and has a low risk of causing allergic reactions, making it a safe choice for those with food allergies.

Here is a recipe suggestion using millet grain

Millet Pilaf with Vegetables

  • 1 cup millet grain
  • 2 cups water
  • 1 tbsp. olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh parsley

  1. Rinse the millet grain under running water and drain well.

  2. In a medium saucepan, bring the 2 cups of water to a boil. Add the rinsed millet grain and reduce the heat to low. Cover the saucepan and let the millet simmer for 15-20 minutes, or until all the water is absorbed and the millet is tender.

  3. In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic and sauté for 2-3 minutes, or until the onion is translucent.

  4. Add the diced carrot and red bell pepper to the skillet and continue to sauté for 5-7 minutes, or until the vegetables are tender.

  5. Add the cooked millet grain to the skillet with the vegetables and stir to combine.

  6. Season the millet pilaf with the dried thyme, salt, and black pepper. Stir to combine and let the flavours meld together for a few minutes.

  7. Remove the skillet from the heat and stir in the chopped fresh parsley.

  8. Serve the millet pilaf hot as a side dish or as a vegetarian main dish.
