Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons organic dried green bell pepper flakes
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 cup vegetable broth
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion, red bell pepper, and green bell pepper and cook until the vegetables are soft, about 5 minutes.

  2. Add the garlic, organic dried green bell pepper flakes, chili powder, cumin, and smoked paprika. Cook for another 2 minutes, stirring constantly.

  3. Add the black beans, kidney beans, crushed tomatoes, and vegetable broth. Stir to combine.

  4. Bring the mixture to a boil, then reduce the heat to low and let simmer for 30 minutes, stirring occasionally.

  5. Season with salt and black pepper to taste.

  6. Serve the chilli hot, garnished with fresh cilantro.
